20 weeks..

Tonight was the first night I have woken up and my belly hasn't deflated on me! Granted its a really bad piccy, scratches, blaring flash and all.. but a moment I felt worth capturing! LOL. Ill take a better piccy and upload it with an ultrasound pic or 2 from the morning as we are going for our 20 week scan.. that is if the little one is cooperating of course!

Meal Planning Monday (Yes, I know its Tuesday..)

Oops, Meal Planning Monday has ran over into Tuesday this week as I felt a little off yesterday and didn't get a chance to post. Ill be doing my grocery shopping this afternoon, so it still works out ok.

Monday -
Steak, Egg and Salad burgers (cooked by Hubby! - they tasted awesome!)

Tuesday -
Ham and Salad (It is so hot today, I dont think I could cook in a hot kitchen tonight!)

Wednesday -
Steak with vegetable bake (potatoes, sweet potato, pumpkin and corn) Green salad on side.

Thursday - 
Beef and Mushroom Casserole.

Friday -   
Kitchen Free Night - Eat out night..

Saturday - 
Home Made Pizza Subs.  

Sunday -   
Savoury Mince.

I will post my recipe's for Beef and Mushroom casserole, vegetable bake, Savoury Mince and Home Made Pizza Subs as the week progresses so stay tuned. Right now, im off to the shops to escape the heat and indulge in some air conditioning!!!!

A Busy Weekend!

Wow! What a busy weekend we have just had, problem is, it's now Sunday night and I'm totally not prepared for Monday! I feel like I need a weekend to recoup after the weekend..

What kept us busy this weekend? 

The kids kicked off their weekend with a sleepover at Grandma's house on Friday night (which they haven't done for a long time) meanwhile no rest for the wicked, I caught up on a late night grocery shop and even managed to watch a movie off of the IQ box (I have about 30 shows to catch up on, since I've been falling asleep so early each night) I cant wait to catch up on Glee, Desperate Housewives and Better Homes and Gardens!  On Saturday I woke up motivated to go to the markets, so with my Mum and two kids in tow we set off for a baby and children's market. I bought some MCN's and an organiser for my fridge and then we proceeded to 'get lost' in the big smoke, had lunch and checked out a few more shops before heading home and calling it a day.  By the time we got home, it was time to head to the drive-in's where Tangled & Tron were playing - I love the drive-in ($25 for 2 movies for 6 people.. whats not to love!) we load up the car with pillows, blankets, snacks and drinks and have a great time (despite the fact I slept through all of Tron, I found it quite boring..) So that was Saturday!

Today, being Sunday was just as full.. after school mass it was onto the Baby and Kids market, which I adored! It was like being a kid in a candy store.. so many great buys, we certainly didn't leave empty handed (more on that later this week).  Next onto IKEA and more great buys.. nothing major, just a few organisation type products that will come in handy around the home and finally onto HOME!

So yes, a bigger weekend than what I have been used to of late.. I think I might sleep now!

Meal Planning Monday...

Well I have my brother staying with me this week, so the meals I plan will have to be large enough to accommodate 3 adults and 1 child most evenings and i'm finding that now swimming lessons have started back up, Monday and Wednesday nights have to be a meals of convenience (or slow cooker meals) as we're not back from the pool in time to cook anything too involved!  Iv also had to mix up my non-cook night & weekly roast to accommodate next weekends upcoming activities, glad we can be flexible :P

So here is our weekly meal plan for this week;

Monday -      Caesar Chicken Wraps.
Tuesday -      Devilled sausages served with mashed potato & vegetables.
Wednesday -  Beef Stroganoff served with rice.
Thursday -     Pork Cutlets served with side salad.
Friday -         Roast of the week - chicken with roast vegetables.
Saturday -     No cooking night!
Sunday -        Hot dogs with the lot...

Colourful Cookies & Cupcakes..

Well today it was all about baking with sprinkles.. Indi wanted to do some more baking, but the catch everything had to have 100 & 1000's in it! So we had a crack at some Smartie Cookies & Some colourful Honey Sprinkle cupcakes..  I must admit we took a bit of a shortcut on these ones and used packet mixes but added our own sprinkles, honey etc - but it was the weekend afterall :)

A Couple of My Favourite & Easy Recipe's..

I thought id share with you some of the yummy recipe's iv been cooking this week, they have been super simple, cost effective & the best part is, they feed a lot of people (or you will have leftovers to freeze).  Both recipe's are taken from Meal Planning Monday on my blog. Be sure to check back next Monday to see what meals I have in store..

Apricot Chicken: 

What you will need;
600g of skinless chicken breast, packet of dry french onion soup mix,  
405ml can of Apricot Nectar, Mushrooms, 1 brown onion, sliced black/kalamata olives.
Serve with rice or mashed potato.

How to make;        

1. Heat olive oil in frying pan & brown sliced up chicken breast & sliced up onion, fry until brown & the chicken is cooked through.

2. Combine the can of Apricot Nectar and the packet of french onion soup mix in a jug and pour over the chicken/onion. Mix the sauce through the chicken until its all coated.

3.  Add the sliced mushroom and olives and allow to simmer for 15 to 20 minutes, this will thicken the sauce. (this is the time I cook my rice to serve the Apricot chicken on, I do so in the microwave)

4. Serve the Apricot chicken alongside the rice or on a bed of creamy mashed potato.. Yum..

Sausage Pasta Bake:




What you will need: 
500g of pasta of your choice (I chose Woolworths Organic Elbow Pasta),1/2 kilogram of beef sausages, jar of your favourite tomato based pasta sauce (I used basil and tomato for added flavour), 1 tin of whole peeled tomato's (you could use diced) 1 cup of grated tasty cheese, sliced black olives (optional).

How to Make:         
1. Cook and drain your 500g packet of pasta in a saucepan, while doing so brown your sausages in a frying pan (you can brown onion to mix in also if you wish).

2.Once your pasta is cooked, drain it and add to it the pasta sauce & whole tin of tomato's.

3.Once the sausages are browned, slice them into bite size pieces & return them to the frying pan to cook through..

4. Add your pasta mix to a baking dish and top with cooked sausage/onion pieces.

5. Spread grated cheese over the top and sprinkle your black olives over. 

6. Pop it all into a preheated oven of 180 degrees, for approx 20 mins or until cheese is all  melted.

Dish up alone or with vegetables if you prefer.. This made a lot of pasta bake, in addition to feeding 2 adults and 1 child (he loved it - success!) the bonus was LEFTOVERS for the freezer! which I have put into my glasslock containers, 2 dinner size portions and 2 lunchtime portions (you may wish to add additional grated cheese to these prior to freezing/reheating).
